This is Zydeco's, a little restaurant in beautiful downtown Mooresville, Indiana. For over a decade, we have specialized in the cuisine of south Louisiana. Perhaps you have seen us on The Food Network or other tv programs like CNN or Fox News.
Or maybe this is the first time you have heard of us, just dropped in and are asking yourself what this is all about. Well, we recreate for you the food my Louisiana family made and continue to make. As a young man growing up in and around New Orleans and Lafayette, Louisiana, I can bring to you the nuance and complexity of true Louisiana cuisine, the food that other so-called "Cajun" restaurants just can't capture.
We stuff our own Andouille sausage, stir gallons of roux, cook our own crawfish, chop the vegetables, soak the red beans, smoke our own Tasso, blend our own seasoning, crush the garlic, cube the alligator tail and stay away from processed foods and too much cayenne or salt. We stay true to the original recipes yet still have fun bringing the lesser known Louisiana classics to you.
